Hot skillet apples are an easy way to make a warm dessert without the oven. The slices quickly caramelize, become softer inside and retain a slight crunch around the edges.

The Spartan variety works well for this recipe. It has dense flesh and a bright sweet-sour taste, which becomes deeper and softer when fried, but is not lost. Spartan does not get soggy and holds its shape beautifully in the pan.

When quickly cooked, some of the dietary fiber is retained, and the addition of olive oil provides healthy monounsaturated fats. Chocolate adds richness and honey adds a subtle, natural sweetness.

Preparation

Step 1

  • Peel and core Spartan apples.
  • Cut into slices.

Step 2

  • Transfer apples to a bowl.
  • Add lemon juice, cocoa or chocolate chips, honey and olive oil.
  • Stir gently so that the sauce evenly coats the slices.

Step 3

  • Heat a frying pan over medium heat.
  • Add apples immediately.
  • Fry for 10–15 minutes, stirring constantly with a spatula, until golden caramelized. The slices should become softer, but retain their shape.
  • The aroma will be bright - warm, chocolate-fruity.

Step 4

  • Place apples on a plate.
  • Drizzle with remaining chocolate sauce from the pan.
