Time and calories
Cooking time: 35–40 minutes
Yield: 3–4 servings
Calories: ~220–260 kcal per serving (depending on the amount of oil)
Ingredients
Turkey fillet – 600 g
Spartan apples - 2–3 pcs.
Fresh sage - 4-6 leaves
Olive oil - 1-2 tbsp.
Salt - to taste
Black pepper - to taste
Warm water or broth - 50–70 ml (as needed)
Preparation
Step 1
Cut the turkey fillet into large pieces.
Cut the Spartan apples into slices, removing the core. You can leave the peel - it will retain its shape when stewing.
Lightly mash the sage leaves with your hands to release the herbal aroma.
Step 2
Heat a frying pan with olive oil.
Place the turkey in a single layer and fry for 3-4 minutes on each side until lightly golden brown.
Season with salt and pepper.
Step 3
Add apples and sage. Reduce heat to medium, pour in some water or broth.
Cover with a lid and simmer for 15–20 minutes.
During this time, the apples will partially release their juice, forming a natural sauce. The turkey should remain soft and juicy.
Serving and storage
Serve hot. The dish goes well with:
• with boiled potatoes;
• with bulgur or couscous;
• or simply with warm bread.
