Green Salsa with Liberty Organic is a fresh sauce made with herbs, olive oil and apple. This version replaces the onion with finely chopped Liberty, which adds crunch, natural acidity and a slight fruity note.

Parsley or cilantro provides an herbaceous character, lemon or lime adds brightness, and olive oil binds the flavors into a soft, lively composition.

This version of salsa replaces the onion with Liberty Organic. This solution makes the sauce softer: instead of sharp spiciness, a slight sourness and crispy texture appear. This reduces the aggressive flavor and makes the salsa more versatile.

Liberty adds pectin (soluble fiber), vitamin C and polyphenols, while fresh greens add vitamin K, folate and additional antioxidants. Olive oil provides monounsaturated fatty acids.

The result is a sauce that not only enhances the taste of the dish, but also adds fresh plant components with preserved nutritional value to the diet.

Ingredients

  • Honey - 1 tsp. (or Jerusalem artichoke syrup / maple syrup - for a softer taste)
  • Chili - a pinch of dry or a little fresh, finely chopped (if you want to add spiciness)

Preparation

Step 1

  • Cut Liberty Organic into small cubes (approximately 3–5 mm).
  • Immediately drizzle with some lemon or lime juice to maintain color and freshness.
  • It is important not to grate the apple or grind it in a blender - the salsa should retain its texture and slight crunch.

Step 2

  • Finely chop the parsley or cilantro with a knife.
  • The stems can be used if they are soft - they will add extra flavor.

Step 3

  • In a bowl, carefully combine the apple and herbs.
  • Add olive oil, remaining lemon or lime juice and salt.
  • If you want a milder taste, add a little honey or honey alternative.
  • For a slight spiciness, you can add a pinch of chili.

Step 4

  • Let the salsa sit at room temperature for 5-10 minutes to allow the flavors to meld.
  • Serve immediately or store in the refrigerator for up to a day.
