Ingredients
Yogurt without additives - 80 g
Grainy mustard - 1 tsp.
Lemon juice - 1-2 tsp.
Olive oil - 1 tsp.
Salt - to taste
Preparation
Step 1
Rinse the quinoa under running water.
Fill with water in a 1:2 ratio (1 part quinoa to 2 parts water), bring to a boil and simmer over low heat for 12-15 minutes until the water is completely absorbed.
Remove from heat and let stand covered for another 5 minutes, then gently fluff with a fork.
Step 2
Cut the pumpkin, beets and zucchini into large cubes or slices.
Place on a baking sheet, drizzle with olive oil, salt and add a little thyme or rosemary if desired.
Bake at 180–190 °C for 20–25 minutes until soft and lightly browned.
The vegetables should become soft but retain their shape.
Step 3
Cut the halloumi into slices about 1cm thick.
Fry in a dry frying pan for 2-3 minutes on each side until golden brown.
Step 4
Cut the apple into thin slices.
You can add Liberty Organic fresh for a distinct crunch. Or quickly fry for 1-2 minutes in the same pan as you cooked the halloumi - it's important not to overheat or bake to maintain the firmness and texture of the apple.
Step 5
Mix yogurt, grainy mustard, lemon juice and olive oil.
Add salt to taste.
Step 6
Place quinoa in a deep plate, then baked vegetables and arugula.
Add halloumi and Liberty Organic wedges.
Sprinkle with pumpkin seeds and drizzle with dressing.
Serve warm.
