Ingredients
Lebedyanskie apples 2 kg (approximately 810 apples)
Lemon juice 1 tbsp. (optional, for brighter taste)
Preparation
Step 1
Peel and core the apples.
Cut into large pieces.
Step 2
Place the apples in the pan and bake at 170°C for about 20-30 minutes until they are soft. This allows the flavor to develop and the texture to be smooth.
Step 3
Place the baked apples in a blender and puree until smooth. Add a little lemon juice if desired.
Step 4
Line a baking sheet with parchment paper or use a silicone mat.
Pour in the puree and spread evenly in a 35mm layer.
Step 5
Dry at 45°C for about 10–12 hours (on convection mode or with the oven door ajar).
At low temperatures, some of the pectins and natural substances contained in apples are preserved.
