Homemade pastila from Lebedyanskie apples

Homemade pastila is a concentrated apple taste without unnecessary additives. In this recipe we use Lebedyanskie apples grown in the apple capital of Russia 100% Lebedyan.

Lebedyanskie apples are distinguished by their rich aroma and natural balance of sweetness and sourness. When baked, the flavor becomes deeper and softer, and after drying it turns into a dense, flexible sheet with a bright apple flavor.

The pastila is made without sugar: natural sugars and pectins contained in apples provide natural sweetness and help form an elastic texture.

Ingredients

  • Lebedyanskie apples 2 kg (approximately 810 apples)
  • Lemon juice 1 tbsp. (optional, for brighter taste)

Preparation

Step 1

  • Peel and core the apples.
  • Cut into large pieces.

Step 2

  • Place the apples in the pan and bake at 170°C for about 20-30 minutes until they are soft. This allows the flavor to develop and the texture to be smooth.

Step 3

  • Place the baked apples in a blender and puree until smooth. Add a little lemon juice if desired.

Step 4

  • Line a baking sheet with parchment paper or use a silicone mat.
  • Pour in the puree and spread evenly in a 35mm layer.

Step 5

  • Dry at 45°C for about 10–12 hours (on convection mode or with the oven door ajar).
  • At low temperatures, some of the pectins and natural substances contained in apples are preserved.

Step 6

  • easy to separate from parchment;
  • be plastic;
  • do not stick to your hands.

Serving and storage

Store the pastila in a tightly closed jar at room temperature.
