Ingredients
- Duck (whole or leg) – 1.5–2 kg
- Honeycrisp apples - 3–4 pcs.
- Garlic - 2-3 cloves
- Salt, freshly ground pepper - to taste
- Sprig of thyme or rosemary
- Optional: 1 tsp. honey for final glaze
Preparation
Step 1
- Wash the duck and dry with paper towels. Make shallow punctures in the skin in the fattest places (breast, thighs), without touching the meat.
- Chop the garlic and thyme sprigs, mix with salt and pepper. Rub the duck with the mixture.
- Leave for at least 1-2 hours in the refrigerator. It’s better to leave it for 8-12 hours without film, so that the skin dries slightly (this will make it crispier when baking).
- Before putting the duck in the oven, take the duck out 40-60 minutes to allow it to come to room temperature.
Step 2
- Honeycrisp cut into large slices, remove the core. Leave the peel on - it will help retain its shape when baking.
- Some of the apples can be placed inside the duck, the rest can be placed around in a mold.
Step 3
- Preheat the oven to 180°C. Place the duck in the pan, breast side up. Bake for 2–2.5 hours.
- Every 30–40 minutes, baste the duck with the juices that have accumulated. If too much fat has been rendered, some can be drained.
- 15-20 minutes before cooking, increase the temperature to 200°C until the skin becomes golden brown and crispy.
- For more even baking, you can carefully turn the duck once for 30-40 minutes in the middle of baking, then return it breast side up.
Step 4
- Ready: When pierced in the thickest part, the juice should run clear.
- Let the duck rest for 10-15 minutes before carving.
Serving and storage
Serve hot. The apples should remain soft on the inside and slightly caramelized on the outside.
You can add a little fresh thyme or a couple of thin fresh slices of Honeycrisp for a contrast of textures.
