The Honeycrisp variety is suitable for this recipe. These apples are known for their juiciness, crisp flesh, and natural honey sweetness. During cooking, they gradually soften, some of the pieces retain their shape, and some dissolve in the sauce, making it thicker.

Ingredients

  • Honeycrisp apples – 500 g
  • Onion - 1 small onion (Variation: shallots - 2 pcs. or fennel - ½ onion)
  • Honey - 2-3 tbsp.
  • Apple cider vinegar - 2 tbsp.
  • Raisins – 40 g
  • Fresh ginger (grated) - 1 tsp.
  • Garlic - 1 clove
  • Cinnamon - ½ tsp.
  • Mustard seeds - ½ tsp.
  • Olive oil - 1 tbsp.
  • Salt - to taste

Preparation

Step 1

  • Wash the Honeycrisp apples, remove the core and cut into small cubes.
  • The peel can be peeled or left as desired - without it the chutney will be more tender.

Step 2

  • Finely chop the onion.
  • Heat the olive oil in a frying pan or saucepan and fry the onion over medium heat for 3-4 minutes until soft.
  • If you use shallots, the recipe does not change. If you choose fennel, keep it on medium heat for 4-5 minutes.

Step 3

  • Add grated ginger, garlic and mustard seeds. Heat for about another minute to release the aromas of the spices.

Step 4

  • Add chopped apples, raisins, cinnamon, honey and apple cider vinegar. Stir.

Step 5

  • Cook over low heat for 15–20 minutes, stirring occasionally. The apples should soften and the sauce should thicken.

Step 6

  • Taste the chutney and add a little salt or more honey if necessary to balance the flavor.

Serving and storage
