Ingredients
Pumpkin (peeled) - 600 g
Apple Gala - 1 large
Onion - 1 small head
Olive oil - 1 tbsp.
Vegetable broth or water - 700–800 ml
Cream 10–20% – 50–80 ml (optional)
Salt - to taste
White or black pepper - to taste
Thyme - 1-2 sprigs (optional)
Preparation
Step 1
Cut the pumpkin into 2–3 cm cubes.
Core the Gala apple and cut into cubes.
Finely chop the onion.
Step 2
Heat olive oil in a saucepan.
Fry the onion for 3-4 minutes until translucent but not browned.
Step 3
Add pumpkin and apple, stir and heat for 2-3 minutes.
Pour in the broth until it covers the vegetables. Add thyme.
Cook over medium heat for 15–20 minutes until the pumpkin is soft.
Step 4
Remove the thyme sprigs.
Puree the soup in a blender until smooth and creamy.
If necessary, add a little hot water to adjust thickness.
Add cream (if using), salt and pepper.
Serving and storage
Serve the soup hot - immediately after cooking, when the texture remains as velvety as possible.
Before serving you can add on top:
• several thin slices of fresh Gala - for texture contrast;
• pumpkin seeds - for a light crunch;
