Apple sbiten with Bogatyr variety

Bogatyr

Sbiten is a traditional Russian warm drink based on water, honey and spices.

In this version we add Bogatyr apple variety. It has dense pulp and pronounced sourness, so the drink turns out rich and balanced in taste. Bogatyr tolerates heat well: the slices retain their shape and do not boil over, so the drink remains clear and the taste is neatly balanced.

Optional:

Sbiten is served hot - this helps to warm up faster and maintain water balance in the cold season. Ginger is traditionally used in warming drinks, and cloves have strong antiseptic properties. Apple adds natural organic acids and pectin, a soluble fiber that gently supports digestion.

The drink uses only natural sources of sweetness - honey and apple. No additional sugar required. If you don't use honey, you can substitute Jerusalem artichoke syrup, maple syrup, or agave syrup.

  • Cooking time: 15–20 minutes
  • Yield: 3–4 servings
  • Calories: ~45–70 kcal per 100 ml (depending on the amount of honey)

Ingredients

  • Pinch of cinnamon
  • A sprig of pine needles (for a light forest aromatics)

Preparation

Step 1

  • Cut the Bogatyr apple into small slices, remove the core.
  • Cut the lemon into slices or slices.
  • Cut the ginger into thin slices.

Step 2

  • Boil the water.
  • Add apple, lemon, ginger, cloves (and pine needles, if using).
  • Reduce heat and simmer for 5–7 minutes.

Step 3

  • Remove from heat and only then add honey.
  • Mix thoroughly.

Step 4

  • Pour the sbiten into glasses, straining if necessary.
  • Serve hot.
