Apple sauce from Alva for cheeses, poultry or fish

This is a thick, flavorful sauce with a mild apple flavor. To prepare it, we chose the Alva variety. Its aroma has notes of fresh raspberries. With gentle heating, this shade intensifies and resembles baked berries.

The sauce adds contrast to salty foods: cheese - juiciness and fruity freshness, poultry - a soft sweetness that balances the fried crust and emphasizes the taste of the meat. It refreshes baked or fried fish with a slight sourness and softens its fat content.

Optional:

Alva contains dietary fiber (including pectin) and organic acids. Compared to creamy sauces, this option is lighter: it has less fat and no added sugar.

Fruit sourness stimulates appetite and makes it easier to accept fatty foods. Therefore, apple sauces are traditionally served with poultry, fish and cheeses.

  • Cooking time: 15–20 minutes
  • Yield: ~300–350 ml sauce
  • Calories: ~70–90 kcal per 100 g (depending on the addition of honey)

Ingredients

  • Fresh thyme or rosemary
  • A little honey to taste

Preparation

Step 1

  • Wash the Alva apples and remove the core.
  • You can leave the peel - it will enhance the color and aroma.
  • Cut into small cubes.

Step 2

  • Heat a saucepan with olive oil.
  • Add the apples and cook over medium heat for 5 to 7 minutes until they begin to soften.
  • Add lemon juice and a pinch of salt. If you are using herbs, add them at this stage.

Step 3

  • For a more uniform sauce texture, puree the mixture with a blender.
  • If you want to maintain the structure, leave some of the pieces whole.
  • If necessary, add a little water and heat for another 2-3 minutes.
