Non-tea tea with apple Alva (serve “flower”)

This is a drink without tea leaves - just herbs, apple and hot water. That's why we call it non-tea tea.

In this version we use the Alva variety - an apple with expressive raspberry sweetness. It is often called “apple-raspberry” for its mild aroma and juiciness without sharp sourness. Combined with mint, thyme and zest, the result is a drink with the aroma of a summer garden - fresh, soft and a little berry.

Thin slices of Alva are easily rolled into the shape of a flower. The light flesh with a pink tint shines through beautifully in a hot infusion, creating the effect of a living bud.

Optional:

The drink does not contain caffeine and is suitable for evening time. Fireweed or fireweed provide a soft herbal base, mint adds freshness, thyme adds a light spicy note. Alva brings natural sweetness and organic acids, resulting in a rich drink without added sugar.

Preparation

Step 1

  • Brew fireweed, mint, thyme and lemon zest in a teapot.
  • Pour boiling water over and let sit for 5-7 minutes.

Step 2

  • While the infusion is brewing, cut Alva into very thin slices - with a knife or on a slicer.
  • Lay out the slices overlapping each other so that each new “petal” overlaps the previous one.
  • Gently roll into a rose shape.

Step 3

  • Place the apple bud in the bottom of the cup.
  • Slowly pour the hot infusion into the center of the flower.
  • The slices begin to open slightly, and a living apple flower appears in the cup.
